Vegetable Couscous Paella 2 1/2 tbsp. olive oil 2 cup chopped onion 1 cup chopped red pepper 1 cup chopped green pepper 1 tbsp. chopped garlic 1 1/2 tsp. paprika 2 cup vegetable broth 3 large plum tomatoes, seeded, coarsely chopped 1 cup peas 1 cup chickpeas 1/2 cup chopped carrots 1/4 tsp saffron 1/4 tsp cayenne pepper 1 1/2 cup couscous Heat oil in large pot over medium-high heat. Add onion and peppers, saute ~5 minutes. Add garlic and paprika, saute ~1 minute. Stir in broth, tomatoes, peas, chickpeas, carrots, saffron, cayenne. Simmer, cover and cook ~5 minutes. Season to taste with salt and pepper. Mix couscous in coer and simmer 1 minute. Remove from heat, let stand 5 minutes. Fluff, let stand 5 minutes.
