Pot Roast Chuck roast, any cut (3 lbs.) 1 lb. carrots, peeled, cut in chunks 3 lbs. potatoes, russet or red, peeled and cut in chunks 2 large onions Put meat in roaster Cover generously with salt, garlic, pepper Slice onions and put on top of meat Put carrots and potatoes around sides Add water to cover meat Cover and bake at 350 for 3 hours. Baste occaisonally and add more water if it evaporates. Uncover and bake another hour, basting occasionally (Recipe serves 3; for 5 people, use 5 lbs. potatoes and 1.5 lbs. carrots (5 lbs. meat)
