Lentil & Ditalinni Soup 1/3 cup olive oil 1 medium onion, finely chopped 1 rib celery, finely chopped 2 cloves garlic, minced or pressed 1 cup lentils 4 cups broth 1 cup chopped canned tomatoes w/juice Pinch of hot red pepper flake 1/2 cup ditallini Parmesan Heat oil (medium-high). Add onion, celery, and garlic. Cook 2-3 minutes. Add lentils and broth. Bring to a boil. Reduce heat to medium-low. Simmer 35-40 minutes. Add tomatoes and pepper flakes. Add pasta. Cook 10 minutes. Serve w/parmesan.
