Big Blintz Batter: 1 cup flour 1/2 cup sugar 1 tbsp. baking powder 1 cup melted butter or margarine 1/2 cup milk 1 tsp. vanilla 2 beaten eggs Dash of salt Combine flour, sugar, baking powder, and salt and mix well. Mix butter, milk, vanilla, and eggs and mix well into dry ingredients. Filling: 16 oz. cream cheese, softened 2 cups cream-style cottage cheese 3/4 cup sugar 2 beaten eggs 1 tsp. vanilla Juice of 1/2 lemon Mix all ingredients together. In a 9x13 pan, pour 1/2 of batter, then all of filling, then other 1/2 of batter. Bake at 375 for 25-30 minutes or until brown.
